At the heart of the Rosewood Mayakoba, the Zapote Bar embodies a rare vision of hospitality: one that transforms a service into a memory. In this interview, Laurent Delporte explores how emotion becomes true luxury with Ricardo BOBADILLA, head bartender at the Rosewood Mayakoba Hotel .
Can a cocktail reveal the soul of a country?
Through Delporte Hospitality, I have the chance to explore the world and meet some of the finest hotels, their teams and their spirit. Each trip is a new stage in my quest for hospitality: to understand how, from one country to another, a customer experience can be transformed into a moment of sincere emotion, a lasting memory.
Le Zapote Bar is fully in line with this approach, thanks to the sensitivity of its team and the depth of its approach. My warmest thanks to the Rosewood Mayakoba Hotel for its warm welcome and for allowing me to enjoy this unique experience, a vibrant reflection of Mexican hospitality.

Emotion before luxury
At the heart of an exceptional resort in the heart of the Riviera Maya, Zapote Bar sets the standard for contemporary hospitality. More than just a tasting room, it embodies an emotional experience, guided by Ricardo Bobadilla, a passionate bar manager who restores the nobility of the word ” welcome”.
Some bars seduce with the rarity of their spirits, the beauty of their decor or the precision of their service. Others make an emotional impression. Zapote Bar belongs to this second category. Regularly cited as one of the best hotel bars in Mexico, it owes its reputation as much to the quality of its cocktails as to the human strength that emanates from it.
Ricardo embodies this philosophy. From the very first exchanges, he asserts with conviction:
“For us, hospitality isn’t just about serving drinks. It’s about communicating. It’s what the person feels when they drink. It’s an emotion they take with them.”
These words sum up the difference between service and hospitality. In a world dominated by speed and efficiency, Ricardo reminds us that true hospitality is taught not only in gesture, but in intention.

The art of detail and storytelling
What makes Zapote unique is the narrative dimension of each experience.
Cocktails don’t just taste great; they tell stories. Five animals symbolize the five worlds of the bar, each carrying a legend, a character, a personality.
“Customers can not only choose their cocktail, but also the story that accompanies it. They don’t just come to drink: they come to experience a meaningful moment..”
In this approach, Ricardo seeks to awaken the customer’s emotional memory. He wants everyone to leave with a memory, a detail, a feeling that will stay with them. “When you get home, maybe you’ll forget the name of the cocktail, but you’ll remember how it made you feel. That’s what creating a memory is all about.”
What is a 5-star hotel bar? creating links before creating luxury.

In the hotel world, the bar of a 5-star hotel is much more than a place to consume. It embodies the soul of the establishment, a place where elegant service meets sincere gesture.
Every detail counts: the light, the temperature of the glass, the posture of the bartender, the precision of the word. But protocol aside, what sets a palace bar apart is the humanity of its service.
In a palace, perfection is measured by fluidity, precision and the absence of false notes. Yet the best bars reach a higher dimension: that of shared emotion.
This is exactly what the Zapote Bar achieves: combining the rigor of a five-star restaurant with the warm spontaneity of a Mexican welcome.
“Service means execution. Hospitality is what you make people feel,” says Ricardo.
“And here, it’s that feeling that makes all the difference..”
It’s at this precise moment that a bar reaches the level of a palace: when it no longer simply serves, but creates memories.
A scene of hospitality incarnate
Ricardo tells me a scene that perfectly illustrates this philosophy.
A couple had come to celebrate their engagement, simply, without ostentation, over a bottle of champagne.
” My colleague Carlos said to me: Ricardo, we can’t let them leave like that. Let’s do something special. “
They then improvised a tour of the bar, guided by curiosity and kindness. The couple discovered the different areas of Zapote, right up to the Blue Room, a confidential area reserved for insiders.
” In this room, we present the treasures of Mexico: raicilla, tequila, bacanora, sotol and, of course, mezcal. These spirits are much more than just spirits: they tell the story of the land, the traditions and the families who produce them. “
The fiancé, himself a chef, is passionate about maceration techniques and the wealth of local know-how. To conclude the evening, the team brought together musicians and waiters to sing and celebrate the couple’s love.
“They cried. That moment touched them deeply. Today, they come back every six months, not to drink, but to relive that emotion.”
This episode embodies what Ricardo calls the memory of the heart – that intimate trace left by authentic emotion. It’s this ability to transform a service into a souvenir that makes Le Zapote a true palace bar, in the noblest sense of the word.
Group hospitality: Family first
In many establishments, luxury is expressed through hierarchy: a charismatic head bartender, a recognized manager, a team that executes.

At Zapote, the philosophy is different.
“I’m the bar manager, but above all I’m a team-mate,” explains Ricardo. “I work with them, behind the bar, in the dining room, wherever you need to be. There are no levels here. There are people. And the same passion.”
The word Ricardo uses most often is not team, but family. This horizontal approach fosters genuine solidarity.
Everyone feels responsible for the well-being of customers and colleagues alike.
“Success doesn’t come from one person, it comes from a group. When you take care of your team, your team takes care of the customers. It’s the natural chain of hospitality.”
This leadership model, based on trust and recognition, gives Zapote a rare collective strength. Everyone becomes an ambassador for the spirit of the place.
Heartfelt hospitality
A palace isn’t just defined by its marble, its gilding or the rarity of its products. It can be recognized by the intention that guides each gesture. At Zapote, service is fluid, precise, but never cold. He exudes sincerity.
“Customers sense when it’s true. They perceive the passion, the desire to please them. That’s what keeps them coming back.”
The bar embodies this rare alchemy of high standards and humanity.
The glasses are polished to perfection, the recipes rigorously executed, but behind this discipline lies a genuine joy, an infectious warmth.
A place that brings life to life

Leaving the Zapote Bar is not just a cocktail, it’s a human experience. Every smile, every word, every thought leaves its mark.
” Hospitality means transforming a service into a moment of life,” confides Ricardo, before returning behind his counter.
Zapote Bar is one of those rare places where you feel seen, recognized and welcomed.
A bar that tells the story of Mexico through its flavours, but above all through its generosity.
And perhaps this is the true luxury of a palace: a place where technical perfection meets human warmth, where service becomes a memory, and where hospitality is experienced as a lasting emotion.
